1 cup chickpea flour
1 tbsp each of dried basil, thyme, oregano
2 tbsp garlic powder
2 tsp sea salt + more to taste
1 cup water
1 cup coconut cream
Juice of a quarter lemon
6 mini potatoes
Handful of arugula
1/4 red onion
Handful of kalamata olives
Directions:
Crust:Preheat oven to 400F
Line a baking sheet with parchment paper
Coat a 2nd baking sheet lightly with coconut oil
In a bowl, mix together the chickpea flour, basil, thyme, oregano, 1 tbsp garlic & 1 tsp sea salt
Add 1 cup of water & whisk until fully combined
Pour mixture onto parchment lined baking sheet & spread out in a thin layer
Place baking sheet in oven for 10 minutes
Once crust has baked for 10 minutes, remove from oven
Using the parchment paper to lift the crust from the baking sheet, flip the crust over onto the olive oil coated baking sheet and peel the parchment paper off the top
Place back in oven to bake for an additional 5 minutes
White Sauce:
Open a can of coconut milk & skim the cream off the top
Mix coconut cream with 1 tbsp garlic powder, 1 tsp sea salt, and lemon juice
Stir until fully combined
Toppings:
Clean potatoes & place in a pot of hot water
Bring to a boil & let cook for 5 minutes
Drain & rinse with cold water immediately
Slice potatoes into coins
Thinly slice red onion
Pit and rough chop a handful of kalamata olives
Wash & pat dry a handful of arugula
Once crust is ready (10 + 5 minutes baking time), remove from oven
Spread white sauce onto crust, then place toppings onto pizza, with the exception of the arugula
Place in oven to bake for an additional 5 minutes
Remove from oven, cut pizza into 4 pieces, top with arugula and serve
